Years in Food Service
Justin has worked in food service for about 17 years ever since starting young as a dish washer. He has worked in many resorts and restaurants across Minnesota and worked as a chef in Wisconsin, Kansas and California. Prior to joining the Bethel team he was a chef at St. Olaf College in Northfield, Minn, and Macalester College in St. Paul, Minn.
Justin earned his culinary degree from Le Cordon Bleu Culinary School including experiences in northern France and Napa Valley, California. In France he worked with master chef Jacques Gauillo as a garde manger chef. He has earned two gold medals and one bronze in the American Culinary Federation Culinary Olympics.
What He Does at Bethel
Justin oversees the culinary operations and works together with the retail and production managers to ensure excellent food production. Justin develops the menus and provides direction to the chefs, bakers, and production team members. He personally connects with students on all manner of food questions and special diet needs.
In His Free Time
When Justin isn't traveling to and from Bethel each day, he enjoys spending time with his wife and new baby girl in Faribault. Justin is an avid collect of vintage men's wristwatches as well as 1980's era high performance three wheelers. He also enjoys working on home improvement projects and traveling, when time permits. His favorite vacation location thus far is San Simeon, Calif., and the beautiful rugged coast.
Despite all of the exposure Justin has had to wonderful foods, his favorite hasn't changed since he was a kid—spicy chili with a glass of chocolate milk. Justin admits that going home and cooking after being in the kitchen all day isn't usually his favorite. However, when he does whip something up at home he takes whatever is in the fridge and turns it into a tasty stir-fry.
