Years in Food Service

Lexi has worked in food service for 7 years. She worked with campus catering while in college. She has been a campus dietitian for three years.

Education and Training

She received her BS in Dietetics from the University of Wisconsin Stout. She then went on to complete her dietetic internship through Sodexo in New Bedford, Massachusetts.

She is also a certified food allergy trainer through Allertrain by MenuTrinfo

What She Does at Bethel

She provides support for students with food allergies. In addition, she educates and trains the dining services staff on proper procedures and allergy safety. She also enjoys educating students on nutrition and wellness while in college by planning events, menu development, and presentations around campus. Her goal is to help students develop a healthy lifestyle now that will carry them into a happy and healthy future!

While she is based at Bethel, in her role as the Sodexo District Dietitian, she provides this support to 13 different universities across Minnesota and Iowa. 

In Her Free Time

She loves to be outdoors rollerblading, biking, hiking, finding a nice patio for brunch, or a local farmer's market! She also loves to cook and let her creative side out by trying and making new things. Another favorite way to fill her free time is by spending time with family and friends and traveling whenever she can.

Favorite Food

This is a tough one as she loves lots of different foods, but she would have to say ice cream! She also loves roasted Brussels sprouts, salmon, burgers, and raspberries.
